Lunch to Take Away? Here is “Omelette with Rice Spaghetti and Grilled Vegetables”
If you know that you will spend the whole day out and you don’t have much time…what you can do is to prepare a delicious omelette!!!
This meal is complete, infact it has both carbs and proteins.
Omelette rice noodles with grilled vegetables
70g rice noodles
1 whole egg + 5 egg whites or egg whites 200g
1 large zucchini
1/2 red pepper
1/2 yellow pepper
1 tablespoon extra virgin olive oil
1/2 teaspoon of turmeric
Pinch of paprika
Pinch of salt
1 . Cook pasta as directed on package. Drain and allow to cool.
2 . Clean and cut the vegetables into small squares and place them in a container lined with parchment paper. Bake in oven at 150 degrees. Turn them occasionally and continue cooking until thet are cooked and crispy.
3 . When the vegetables and pasta get cold mix them together with all the other ingredients, mix well.
4 . Cook the omelette in the oven or in a frying pan. I use a no-stick pan that allows me to cook everything without adding fat.
This is a variant. Instead I used puffed rice, to reduce the preparation time. I took it today at the university and it was delicious ! 🙂
