Sunny Friday…
Finally … after a week of rain and cold here in Naples the sun is shining…. and when the sun is shining I feel different…alive and ready for a “cheat”without feeling guilty 😉
In the end… cooking for others is like saying ” I love you”. It means to take care of someone you love … or at least for me it is like this, so this is why I love to cook for myself but also for others!
It is doubtful that everything I do is good, in fact most of my recipes, especially those “healthy recipes”, were born from experiments. The desire to try new and healthy ingredients. My guinea pigs?!? My brother and my boyfriend ! ❤ < 3 ❤
Here you are: Choco, Coco, Vanilla Cake made with avocado, cocoa and coconut milk 😉
Ingredients:
- 3 cups of oatmeal
- 5 tablespoons unsweetened cocoa
- half a teaspoon of salt
- 1 tablespoon of baking powder
- 1/2 teaspoon vanilla powder
- 1 cup of carob flour
- 10 drops of tic or sweetner
- 2 cups of coconut milk
- 1 tablespoon of coconut oil
- 1 ripe avocado
Procedure:
Peel the avocado and mix the pulp with the carob flour and coconut milk. Add the coconut oil, the vanilla and mix well.
In another bowl add the flour, cocoa, salt, and baking powder . Pour the mixture also made with avocado and mix all with the help of a mixer (could serve more coconut milk) .
Preheat the oven to 180 degrees. Pour the mixture into a cake pan with removable rim and bake for about 80-60 minutes.
Once cooked let it cool to room temperature. Thanks to avocado it is very humid inside.
